Vegetable Man

My mother found this idea and posted it on her Facebook page. As a former health teacher she thought it was a great idea for the grandkids. My mom was right. Though we eat healthy meals and snacks, I have never seen my kids eat this many vegetables at one time and enjoy it.  

First, we gathered all of the ingredients. My three-year-old really enjoyed this part. The older two hadn't come into the kitchen yet, so she was able to have some quiet time with me as we washed and sliced and talked about the names of the vegetables we planned to use.  

I wish my photo was a bit better. By the time I realized that my angle was off, half of our vegetable man had been eaten. You can use all different kinds of veggies. The photo I saw used cherry tomatoes for feet and a red pepper for the ribs instead of the yellow. I prefer to buy vegetables that are from within the United States, so I chose a yellow pepper during my recent grocery shopping trip.

You can also use broccoli and cauliflower for the hands. The kids didn't want to make another trip to the store when I realized we didn't have that, so we made do with what we had.  

My kids are 8, 6 and 3. Here are the fabulous comments I heard as we created. "Can I have a cucumber?" "Can I shorten the pepper using my mouth?" And as we worked I heard, crunch, crunch, crunch. My favorite comments came at the very end, "Mommy, can we eat it now?" and my eldest, who had been munching like crazy said, "I'm too full!"
