Rainbow Topped Cupcakes for a Fun Party Treat

These cupcakes are super cute, and oh so easy to make. They are great for a rainbow themed birthday party or for St. Patrick's Day. I always like things that are fast and easy to make, and these cupcakes fit the bill. 

Jessica from blogaboutitall.com tells us how she made them:

I made these adorable mini rainbow cupcakes. The kids loved them. I made these for my son's school classes as well and they were a huge hit. We are talking cupcake, candy, and marshmallows. You can't go wrong with that.  I baked mini cupcakes, topped with blue frosting and then used mini marshmallows for clouds. You just cut a small slit in them to help hold the Sour Patch Rainbow candy.

You can't beat that for easy! You could even use premade mini cupcakes with white frosting and use Wiltons Color Mist spray in blue to tint the frosting if you are really in a rush.
